Távora-Varosa

On the border with the Douro (to the north) and Dão (to the south), this region produces fresh whites and soft reds, and it is certainly best known for its sparkling wines. The production of this wine dates back to the 17th century, by the monks of Cister, who inhabited the region and planted the first vines here. In 1989, Távora-Varosa was declared the first demarcated sparkling wine region in Portugal. Predominantly granitic and limestone-poor, sometimes schistose soils, hot summers and harsh winters make this a privileged region for wine production.
